Guacamole

Ingredients:

· 4-5 Hass Avocados
· ½ small Red Onion, finely chopped
· 2 small Serrano chili peppers, seeded and finely chopped
· ½ cup Cilantro, finely chopped
· 2-3 cloves Garlic, finely chopped
· 2 small ripe Tomatoes, seeded and chopped
· 1 tsp Kosher Salt (plus add’l to taste)
· 1 tsp Cumin Powder
· Cayenne Powder (to taste)
· Dash Tobasco (optional)
· Juice of 1 Lime (optional) *

* The lime mostly for preservation of the color of the avocados. If you are serving immediately, it is not needed. However, some like the taste of lime in their guacamole. I only like small hint of lime, using the juice of half (so to not overpower the avocados).

**The measurements are just a guide. Change it to your own taste. I like to make mine spicy with the peppers and cayenne. Go easy at first and add more as needed.

Directions:

1. Combine half of the chopped onion, half of the cilantro, all serrano peppers, all garlic, and salt. Pulse in a food processor. Pulse until a coarse paste has formed. Alternately, if you have a molcajete (lava stone bowl that they use in restaurants), you can mash it together against the bowl with a heavy spoon. Transfer the mixture to your bowl in which you will be serving the guacamole.


2. Slice your avocados in half down its oblong side. Pull the two sides apart. Discard the pit (Wack your knife into the center of the pit so it sticks, and pull it out with your knife). With the flesh still on the skin, make cuts in your avocado with a knife. Then scoop out the flesh with a spoon into your bowl. You should be able to gently maneuver the entire half of the flesh in one piece. If desired, you may also mash the avocado at this point. I personally prefer a chunky texture.


3. Season the avocado with cumin powder and cayenne.


4. Squeeze the desired amount of lime onto the avocados.


5. Fold in the tomatoes, remaining onion and cilantro. Ensure that all ingredients are incorporated well, but try not to over mix. Taste for seasonings and fold in additional kosher salt as needed. Add a dash of tobacco if needed as well. Serve and enjoy!
