Belgian Waffles

Ingredients:
- 2 Cups All Purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 4 Eggs, separated- room temperature
- 2 tablespoons Sugar
- 2 cups Buttermilk- room temperature
- 1/2 stick Unsalted Butter, melted
- 1/2 teaspoon Vanilla Extract

Directions
- Preheat waffle iron according to manufacturer's instructions.
- In a bowl, sift the flour, baking powder, and salt
- In a separate bowl, beat together the egg yolks and sugar until the sugar is dissolved and the eggs are pale yellow. You can use an electric mixer.
- Add the buttermilk, melted butter, and vanilla extract, and whisk to combine. It's important that the buttermilk is at room temperature, or even slightly warmed, or the butter will harden once it comes in contact with it.
- In a third bowl, beat the egg whites with an electric mixer until soft peaks form.
- Gently fold the egg whites into the waffle batter. Be careful not to overmix.
- Coat the waffle iron with cooking spray, and poor about 2/3 cup batter onto the iron. Close and cook until golden brown (approx. 5 minutes). Repeat with remaining batter.
