Bellinis

Ingredients
- 2-3 peaches, peeled and cubed (frozen peaches are ok if not in season)
- 1 teaspoon Orange Zest
- Simple Syrup *
- 1/2 cup Ice Cubes
- Prosecco

* Make simple syrup with 1 cup sugar to 1/2 cup water. Stir the sugar and water in a saucepan over medium heat until the sugar dissolves. Bring to a simmer and cool completely before using.

Directions:
- Puree the peaches and orange zest in a blender with a couple tablespoons of simple syrup. Add more or less simple syrup depending on the sweetness of the peaches and your taste.
- For each serving, pour about 3 tablespoons of the peach puree into a glass. Slowly pour enough Prosecco to fill the glass, and gently stir to blend.
