Ingredients:
- Butter
- Wonton Squares (2 per basket)
- Eggs (1 per basket)
- Grated Cheese of choice (i.e., cheddar, pepper jack, gruyere, parmesan, etc)
- Herb of choice (i.e. thyme, rosemary, basil, scallions, chives, etc)
- Meat of choice (crumbled sausage, diced bacon, prosciutto)- optional
- Salt/Pepper
*Need a muffin tin for this.
*The baskets are made with wonton wrappers, but you can optionally make the baskets with sliced proscuitto.
*You can make different variations of egg baskets for a crowd, such as mozzarella/tomato/basil, jack/scallions, cheddar/bacon/chives, parmesan/gruyere/thyme/prosciutto, brie/rosemary, etc.
Directions:
- Brush muffin tin with butter and line with two wonton squares so that all points show. They should be place the tin at different angles.
- Crack an egg into each muffin cup. Top with the toppings you desire. Season with salt/pepper to taste.
- Place in a 375 degrees oven for about 10 minutes. Cooking time will depend on how runny you prefer the egg, so you will have to play around with this. I remove it once it's still jiggling with some consistency, which is a semi-runny yolk.
- Once to desired doneness, remove from the oven and let sit for a few minutes before removing the baskets from the tin.
