Ahi Tuna Salad

Ingredients:
- 1 lb Ahi Tuna Steak
- 4 tablespoons Olive Oil
- Kosher Salt, to taste
- Coarsely Ground Black Pepper, to tasted
- Zest of 2 Limes
- 1 teaspoon Wasabi Powder
- 3 tablespoons freshly squeezed Lime juice (approx 1 1/2 limes)
- 2 teaspoons Soy Sauce
- Tabasco- approx 10 dashes
- 1 teaspoon Sugar or Honey, more or less to taste
- 2 Avocados, ripe and diced- do not dice until time to use to avoid browning
- 1/4 cup Green Onions, white and green parts, minced
- 1/4 cup Red Onion, diced
- 1 teaspoon Jalapeno, minced
- 1/4 cup Cilantro, chopped

Directions
- Brush the tuna steaks with olive oil, and sprinkle liberally with kosher salt and freshly ground black pepper.
- Places the tuna steaks on a very hot grill and cook for about 1 minute on each side (for inch steak..if larger, cook more). I use an indoor grill. You can also use an iron skillet.
- Once the tuna steaks are nicely charred on both sides, remove from heat and set aside.
- In a small bowl, combine the olive oil, additional salt/pepper to taste, lime zest, wasabi, lime juice, soy sauce, hot sauce, minced jalapeno, and honey/sugar to taste. Be sure to taste as you go and add more or little of any ingredient to adjust to your palette.
- Add the diced avocados to the vinaigrette.
- Cut the tuna in chunks, and place in a bowl.
- Add the green onions, red onion, cilantro, and mix. Pour the vinaigrette mixture over the tuna and gently fold/mix to incorporate. Serve immediately.
